Meat & Fish Christmas Menu

Amuse-Bouche
Crispy sushi rice with ponzu sauce and BBQ short rib
Wine: Sauvignon Blanc – fresh, citrusy, lively acidity

Starter
Blini with hot-smoked salmon, horseradish cream, and fish roe
Wine: Verdejo – aromatic, green fruit, refreshing acidity

Intermezzo
Roasted beets with raspberry dressing, goat cheese, and walnuts
Wine: Grüner Veltliner – crisp, elegant, with a hint of spice

Main Course
Venison steak with roasted vegetables, Roseval potatoes, and truffle–red port jus
Wine: Malbec – rich, dark fruit, soft tannins

Dessert
Stewed pear cake with vegan vanilla ice cream, caramel, pecans, and Atsina cress
Wine: Primitivo – ripe red fruit, soft tannins, touch of sweetness
